Salads for days.

For the past two weeks, we've been eating a big salad for dinner almost every night. Seriously, I didn't know I could love salad this much! We pretty much throw in whatever we have on hand. Rice, beans, fruit, nuts, cheese and, of course, every vegetable imaginable. 

Last night's salad was particularly delicious.

Organic Baby Spinach
Pear
Bell Pepper
Avocado
Heirloom tomato
Mushroom
Quinoa
Freshly Shaved Parmeasan
Salt
Pepper..a lot of pepper.

that looks so delish! I love salads and make one everyday for lunch I'll have to try this next week
